Jean-Paul & Benoît Droin


The Droins have been producing wines in Chablis for nearly 400 years - Jean-Paul Droin is the 12th generation of growers and is one of the most dynamic in the region. He has 13 hectares of vineyards and produces 14 different wines, including Petit Chablis, Chablis, 7 Premiers Crus and 5 Grands Crus.

Droin`s Premiers and Grands Crus are fermented and aged in oak, although recently the proportion of new oak used has been considerably reduced. Droin says "I use less new oak now than I did 10 years ago; my feeling is that you don`t make your best wines in new oak barrels." Although these are rich, full-bodied, buttery wines, they still manage to retain a steeliness, raciness and purity of fruit which are the hallmarks of classic Chablis.

Benoit Droin’s Vaucoupin vineyard fortunately avoided the hail in 2007. This is a piercingly fresh Chablis, fermented entirely in stainless steel, a perfect candidate for the classical combination with oysters.

This is an opulent, almost exotic Chablis – fully ripe grapes almost suggesting a whiff of Viognier. Beautifully poised and already delicious.

Sadly volumes were reduced here by the hailstorm, but the quality is excellent. Benoit has used just 20% of wood here so as to retain the elegance of the fruit. Very stylish.
