Domaine de la Masette
Henri Boukandoura's small domaine is located just outside the picturesque village of Cessenon-sur-Orb in the Hérault region of the Languedoc. It is just on the edge of the Saint-Chinian appellation and benefits from the sea breezes coming off the Mediterranean sea which is only a 20-minutes drive away. He currently has 5 hectares in production and the grapes are well suited to the rocky, gravelly soils that they are planted on.
His red is a blend of Grenache, Carignan and Syrah - the grapes are fermented by carbonic maceration (the same method used in Beaujolais) and the wine is then stored in cool, cement vats. It is then lightly fined and filtered before being bottled.
