The Champagne House of Bollinger was established in 1829 by Jacques Bollinger and Paul Renaudin. Over the years the vineyard holdings have been steadily increased with the largest expansion taking place under the stewardship of the legendary Mme Lily Bollinger. She ran the company between 1941 and 1977 and today it is managed by her great-nephew, Ghislain de Montgolfier.
Bollinger has a reputation for producing muscular champagnes with body, depth and power, and is today considered one of the "Great" Champagne houses. 70% of the grapes come from the firm's own vineyards. 80% of the harvest is barrel-fermented with the wines being kept on their yeast lees for an extended period of time (in the case of the RD, around 10 years). Bollinger produces classic, complex, Pinot-Noir dominated champagnes with the ability to age gracefully for many years.

Bollinger are famed for their rich and savoury style of wines, dominated by Pinot Noir and underwritten by oak fermentation and extensive lees maturation. It seemed only a matter of time before the release of a non-vintage rosé and this wine has been well worth the wait. Dry, powerful and very serious indeed, this highly polished rosé combines notes of plum, patisserie, cinnamon and spice. With structure and weight and harmony of vibrant flavours right across the palate, this is a delicious accompaniment that can match a variety of dishes.

Ready to drink now, there is an abundance of ripe and generous flavour on the nose, with quince, caramelised apple and hazelnut standing out. Bollinger’s Grande Année style has become more precise and focused in recent years; this has been achieved with consummate skill as both the perfectionist philosophy and, not unrelated, the methodology of vinification, remain unchanged, the latter employing fermentation in old wood and then 72 months en tirage resting under natural cork on its yeast. Old-style Bollinger was indulgent, autumnal and entirely delicious; new-style Bollinger maintains as axiomatic at least two of these descriptors. The emphasis on freshness is evidenced from the lighter colour, the pinpoint bubbles and a memorable palate which recalls white chocolate, soft honey and yellow fruit. The 70 % Pinot Noir lends intimations of the savoury and playful red fruit rejoinders; the ensemble defers to a vintage which commands respect and, in such an approachable manifestation, affection . Appealing ripe fruit aromas greet you on first acquaintance with bruised pear, honey and waxed lemon rind to the fore. There is even a touch of sea breeze freshness but I am resisting the urge to compare this to Honey Ryder emerging from the sea. Effortlessly stylish, forceful but understated (can you see where I am going with this?) with a distinct hint of nuts, yes the similarities to James Bond are remarkable. Bollinger has crafted a suitably suave and sophisticated wine to celebrate the release of Bond’s latest adventure. The hot 2009 vintage gives weight, richness and a generous density of fruit (one might say explosive…). The nose is of white flowers, baked apple fruit and hints of almond and acacia honey with classic brioche notes in the background. With a rich, lifted nose this has a hint of vanilla, pears and toasty brioche. The James Bond franchise has built an enduring relationship with the Bollinger brand that goes back to 1973. To celebrate the release of the new film, Spectre, the House has produced a 2009 bottling which has been dedicated to the Bond Limited Edition exclusively.
Not only are you getting a very good Champagne made from Grand Cru sites but it also comes in a rather chic looking metal chill box, a design apparently inspired by James Bond’s tuxedo and intended to imitate the texture of the handgrip on Bond's favoured sidearm, the Walther PPK. We don’t know whether it was Q himself who came up with the idea and alas it appears not to be bullet proof but we think you will love it none the less.
Of course James Bond has a very discerning palate as do our customers, so while the bottle is dressed to kill is the Champagne inside a worthy drink for Britain’s greatest secret agent (and, indeed, our customers)? The answer is irrefutably yes. Having tasted a bottle we are pleased to say that this is serious Champagne that really delivers on the palate.

Champagne Bollinger has opted to only release the 2000 vintage of its prestige cuvée R.D. in Jeroboam, as, in their view, the three litre format represents the best bottle size for the Champagne to age in. Just 400 Jeroboams of R.D. 2000 have been bottled, with 350 sold in numbered gift boxes and the other 50 forming the centerpiece of the “Bollinger Experience.” Designed by Eric Berthes, who also collaborated with the house on the “Bollinger bullet” in 2009, the black lacquer structure boasts a red leather lining. Bollinger R.D. 2000 is made from grapes grown across 16 crus, with 76% of the blend made from grand cru grapes. A blend of 63% Pinot Noir and 37% Chardonnay, all 400 Jeroboams were disgorged on 07/07/2012, in honour of Bollinger’s links to James Bond.

Good old Bollinger pioneered giving useful information on the back label. This wine, made from the produce of 16 Premier and especially Grand Cru villages is intense and savoury. (Jancis Robinson - FT Top 100 Festive Wine - 26-Nov-2011) An absolutely magnificent nose of melted butter on thick white toast with beguiling undertones of tropical fruits. (I know it sounds a tad romantic but it really does!) As complex on the palate, with a weight and breath that's totally compelling. Rich, round and profound this is truly one of the most exciting champagnes I've drunk. Gorgeous now but will grow and blossom beautifully over the next decade. (Simon Staples, Berrys' Fine Wine Director) This enticing blend of 60% Pinot Noir and 40% Chardonnay has been fermented in oak and aged under natural cork until disgorgement in July of 2010, then allowed a respectable repose before its release. The nose is forthright and powerful, with orchard fruit and hints of honey evidenced, together with sherbet and grilled almond, all amazingly pure and precise. Intimations cede to certainties on the palate as encyclopaedic flavours defer to the reputations of vintage and House alike, with nutty, creamy notes, an elegant fruit scherzo with fine balancing acidity, and an authoritative finish, all perfectly integrated and wonderfully fresh. Bollinger’s 2002 R.D. was always going to be special. A great vintage, a grand house and a magnificent pedigree. From the very start, it flows into the glass creating a superb, creamy mousse which leads on to brioche and honeyed hints signifying all the richness, weight and sheer concentration that late-disgorgement brings to the best Champagne. That gorgeous creaminess first seen at pouring comes through again, tight knit and in multiple waves of different hues and flavours before finally finishing fresh, youthful and even zesty. A terrific wine and one to intrigue for decades – on those very special occasions. There is a full and lively mousse, an effervescence that accentuates the aromas of hazelnut, manuka honey, gunflint, white flowers and dried Verbena on the nose. At first the palate is rich, open and full with swathes of ripe pear and honey and yet in a matter of moments this opulence turns in on itself. The tension and nerve on the back of the palate is incredible, the acidity and energy is taut and steely, much like a playful and yet painfully shy child. This 2002 R. D. is complex and cerebral. Bollinger's Grande Année Rosé champagne is a subtler wine than its non-vintage sibling, lighter in colour and more delicate of aroma, yet ultimately more profound. Pinot Noir, as one would expect, dominates the blend ( 68%) , and is also added as a still wine, but only a relatively modest 5%. Onion-skin heading towards salmon of colour, the 2004 boasts all the qualities of this generous vintage and the wine, en bouche, combines lively red fruit notes with a savoury, satisfying finish. Taut and focused, this is an engaging exemplar of the cerebral potential of Rosé Champagne in general and Bollinger’s burgeoning expertise in this area in particular. (Simon Field MW, BBR Buyer)

These are classic and complex Pinot Noir dominated Champagnes, powerful yet refined with the ability to age beautifully. 2004 was a vintage which combined quality and quantity. Conditions were similar to those of 1998, which is now perceived as an excellent year. The 2004 releases are fine successors to the outstanding 2002 wines, continuing the quality of this extraordinary Cuvee. There’s huge power on the dense, lush palate with notes of red apples, stone fruit and ripe figs which are balanced by some refreshingly crisp acidity, before the long, well-defined lingering mineral finish, rounds off this fantastic offering from Bollinger.
