Mont du Toit
The Mont du Toit winery is located in the Paarl wine region and is the brainchild and the apple of lawyer Stephen du Toit’s eye. His great love is red wine and the production here is 100% red in consequence. Grape varieties include the whole gamut of Bordeaux cepages but also leans a bit towards the Mediterranean in the form of Shiraz and Mourvedre.
His standard cuvée is Mont du Toit, usually a blend of Cabernet, Merlot and Shiraz. Next comes Le Sommet, an ambitious but secret blend, and then, in exceptional years only, Les Coteaux. This latter is a blend of Cabernet, Merlot and Shiraz and each varietal is vinified separately and is only blended with then others after 12 months in barrel. The wine then spends another 10 months in barrel before bottling.
