Cave Spring Cellars
Cave Spring Cellars was established in 1986 by Leonard Pennachetti and Angelo Pavan with the aim of producing quality wines that reflected the local terroir. Situated on the banks of Lake Ontario, the narrow 15 km shelf of Niagara's Beamsville Bench escarpment is the area's only hillside, encompassing Niagara's top vineyards and with a similar microclimate to Bordeaux, Burgundy and the Rheingau.
Cave Spring makes wine from a wide range of grapes, including the ubiquitous Chardonnay, Riesling, Pinot Noir and even Gamay. However it is their dessert and icewines that have really made their mark outside Canada, offering quality and value to match any in the world.
