Domaine de la Saboterie

Christian Chaussard was destined to become a "fonctionnaire" (a civil servant) but his heart was in the vine and in 1988 he instead became a full-time vigneron. He has 3.5 hectares of Chenin Blanc vines at Rochercorbon in the Vouvray appellation - where he practises biodynamic viticulture.

The usual production is dry Vouvrays but in exceptional years such as 1989 and 1990 he also produces a tiny quantity of medium-sweet "moelleux" Vouvrays which are of the highest order.
