Domaine Claude Chevalier


Domaine Chevalier originated in 1850 when it was created by Emile Dubois. 2 generations later, Georges Chevalier began managing the domaine, and acquired a parcel of Corton-Charlemagne vineyard. He began domaine-bottling in 1959. It was in 1973, while his father was running the domaine, that Claude Chevalier starting working on the estate, aged 16.
 
In 1994 Claude took control of the cellars, and set about changing the style of the wines into a more modern fashion, to counteract the traditional winemaking views of his father, namely to produce robust and well-aging wines, which unfortunately did not do particularly well in their youth.
 
This modernisation has resulted in an influx of new technology and renovation in the cellar: these days the reds are sorted on a table de tri, before undergoing several weeks of cooling, maceration and fermenting, being both pumped over and then punched down prior to a délestage. 2000 marked a milestone in the renovations, this is the year when not only a sorting table was introduced and the harvest reduced, but Claude also brought legendary oenologist Kyriakos Kynigopoulos, ‘the vineyard magician,’ into the fold.
 
Claude now also presides over the Confederation of Burgundian appellations and vignerons, giving both himself and his vineyard a certain standing among other Burgundy winemakers.
 
Domaine Chevalier’s wines are renowned for their sophistication and concentration, with a stylish, fresh feel. The whites in particular are worth noting.
