Italy.
Paolo's friend Enzo Pontoni (of Miani) has been consulting recently, together with french geologist Yves Herody and since 2002 viticulture has been strictly organic with admirably low yields (25 hl per hectare).
The wines benefit from fermentation in oak, spend up to 24 months on lees and in barrel, and will ideally spend more time maturing in the bottle, all of which endows them with a remarkable ageing potential. The house style is lusciously fruity and concentrated.
Paolo has really transformed his wines to the front-runners in the Fruili modern winemaking scene.
