Philippe Butin

Aided by his wife, Philippe is the third generation Butin, now farming 5.5 hectares of vines from his home in Lavigny and the first to export the domaine's wines. Under the appellation Cotes du Jura, Savagnin and Chardonnay account for 4.20 hectares and, Poulsard, Trousseau and Pinot Noir 1.15 hectares. The remaining 0.15ha is planted with Savagnin located within the tiny Chateau-Chalon enclave, prized for its Vin Jaune.

Phlippe's wines possess great energy, rich fruit & terroir expression as well as such minerally freshness; a unique vinous experience, brilliant with a wide range of dishes.

In making his Cuvee Speciale, Savagnin/Chardonnay (80/20%), are vinified separately; the Chardonnay in cuve and topped up to retain freshness, while the Savagnin is raised as if it were a Vin Jaune, in old ex-burgundy 228 litre casks for 4 years, under flor & not topped up.

The majestic Chateau-Chalon Vin Jaune is vinified in the same way, yet aged for a full 6 years in oak.
