Domaine Jean Dauvissat

Jean Dauvissat and his two sons have holdings in some of the best vineyards of Chablis. The 1er Cru Fourchaume is the most sought-after and their holdings are in the best-placed and oldest part of the vineyard.

Many a good Chablis is ruined with a heavy-handed use of oak - at Dauvissat no wood is used and the wine is given plenty of time to develop before bottling, which usually takes place in the second half of the year after harvest.
