Restricted drip irrigation, moisture monitoring, low rainfall and judicious fruit thinning and green harvesting allows for the production of healthy and physiologically ripe fruit. The grapes are harvested at optimum ripeness usually at night. The grapes are then delivered to the winery before sunrise. This helps minimize oxidation and maintains maximum flavours and bouquet.
With the help of Colin and Ben Glaetzer, whose wine makings skills are beyond reproach, the wines of St Andrews Estate are now just starting to hit their stride. All wine is made from 100% estate grown fruit and reflect the unique regional and varietal character of the vines. The wines are distinctive in their intense ripe fruit and exceptional softness at a very early age.
