Don Miguel Fontadez is a chemist by trade. Behind his pharmacy is a unique 'sacristia' where there is a collection of antiques, pottery paintings and, most importantly, a tiny bodega containing a few casks of old exquisite wines, of which the Amontillado is a classic its genre. Essentially a Fino that has been allowed to age in the American oak of the Solera, this wine has a golden lustre, and deeply satisfying nutty aromas. A very complete and satisfying sherry, this is a supremely versatile wine; try with toated almonds, consomme or richly flavoured fish.........possibly one after the other!
