"Eben has blended 80% Syrah & 20% Mourvedre from four different Swartland
mountain soils (granite, clay, gravel, slate), vinifying the fruit for 6 wks in
20 hl open wooden fermenters before ageing the wine for 24 months in Bordeaux
barrels. Such was the tricky dry vintage that a severe sorting of Eben's 7
hectares was required to ensure the best fruit, yielding a tiny quantity (16
hl/ha) of wine blessed with both power & freshness. Cellar till 2015."
