The Brajkovich family continue to evolve their range of wines, introducing two
single-vineyard Chardonnays. The Hunting Hill vineyard is set high up above
Mates, on a cool breezy site giving a finely-tuned, restrained, Chablis-like
style of wine that needs 2-3 yrs ageng before drinking and will continue to
evolve over the next 5-8 yrs. As with their other wines, the fruit is
hand-harvest, whole-bunch pressed, fermented using wild yeast (giving more
minerality) and matured for 11 months in french barriques. Great with plaice.
