Cédric Chignard is now pretty much completely in charge of the vinification at
this famous old Estate. He experiments a little with cement and oak for
fermentation and then ages the various cuvées for differing lengths of
time; fundamentally, however, this is as it has always been, one of the best
wines from this poetic and beautifully located appellation. Raspberry,
hedgerow, gentle spice and an almost ethereal elegance, as far as it is
possible to be from the madding crowds of a confected Beaujolais.
