"Dom. D'Aupilhac is a fantastic and acclaimed organic property located in the
enclave of Montpeyroux, 36 km to the north of Montpellier. The blend, since you
asked, is made up of 32% Mourvèdre, 20% Syrah, 28% Carignan, 15% Grenache and
5% Cinsault; the assemblage skilfully aged for 20 months in barrique. The
relative new-comers to the Languedoc vinous landscape, Syrah and Mourvèdre,
lend, respectively, ripe blackberry fruit and a savoury depth; their
juxtaposition here is deeply satisfying, with mineral length and finely-wrought
tannins completing the picture."
