2007 has been perhaps an ideal season for Dolcetto: the relatively cool summer
preserved the fresh violet cream aromas, along with those of plum skin. The
Serraboella vineyard's limestone-rich clay soils brought great freshness and
purity to the otherwise richly textured, morello black cherry fruit. A match
for squid ink risotto.
