2006 and 2007 were really successful for this style of wine, and it provides a
real alternative to better-touted dry whites such as Loire or Burgundy. Made
from the classic Bordeaux white blend of Semillon and Sauvignon, it is very dry
and mineral, so not quite so successful with sauced fish dishes. Gloriously
aromatic in youth from barrel fermentation, and then on the palate the ripe
fruit is beautifully balanced by crisp acidity. Delicious as an aperitif, or
with shellfish, fried fish or light poultry dishes.
