To suggest that the Carte Blanche is merely the Brut Premier with extra sugar
added at the dosage stage would be an affront to the philosophy of this,
possibly the greatest of all Champagne Houses. Nonetheless, the wine is not
dissimilar in the sense that it is made from 50% Pinot Noir, 30% Chardonnay and
20% Pinot Meunier, with the addition of up to 20% wood aged reserve wine;
it is dissimilar in the sense that it is segregated from the outset, its source being juice deemed most appropriate for the extra sugar (around 40 g/l compared with 12 g/l or so in the Brut Premier). The result juxtaposes the tropical with the floral, with both honied and linear notes evidenced and the sugar already harmonious, almost discrete, but not discrete enough to prohibit a perfect pairing with a fruit-based pudding!
