Not only must you visit the enchanting Sancerre village of Chavignol, for its
vines as well as for its crottin cheese, but when there find the path to
Le Cul de Beaujeu: a breathtaking vantage point & cru perched overlooking
the village itself. The soil looks compact and stony, a demanding place to grow
grapes, yet the wine is one of the most sublime whites known to man. I've
always admired Francois's Cul de Beaujeu for its gentle grace, complex detail
& nuance. It's a wine that needs time...let's say drinking from 2012, along
with fowl or fish.
