The fashion for zero-dosage Champagnes is a fascinating phenomenom. In my
experience a lot of consumers actually like a little more dosage than they own
up to, and the sugar is certainly useful as a cosmetic flatterer to lesser
wines. Those without sugar at all, such as this example, must have an
exceptionally good raw material and have achieved a good ripeness of fruit if
the finished wine is to pass muster. We should not be surprised, given the
skill of Francois Roland Billecart and his winemaker Francoise Domi, that La
Maison Billecart has succeeded fantastically well here. The ripeness of fruit,
the rich autolytic character and the flinty backdrop make this a wine of the
highest order, an excellent aperitif.

The Billecart-Salmon house style is defined by class, elegance, and a sublime
freshness to the wines. Long fermentations at cold temperatures with no
malolactic fermentation are the rule at this small, family-owned property in
Mareuil-sur-Ay.
