Frédéric Bourillon produces Vouvray of enormous charm and complexity. Based at Rochecorbon just outside Tours, the domain was founded by Gaston Dorléans in 1921 and it has been consolidated by Frédéric Bourillon Dorléans, the fourth generation.The Chenin Blanc grape remains one of the Loire’s great, & unrealised strengths. The white chalky soils of Vouvray is where Chenin is at its most floral; This example is a classic, elegant French white wine.

Berrys’ range of Italian wines has never looked so smart. While the traditional strength is still in the north & centre, we’re now exploring the deep south. Fiano is one of the notable white varieties, famous in Campania (Fiano di Avellino) but pretty here in Basilicata only 40 minutes away.

There are a few outcrops of calcareous clay soils near the Carbone’s village of Melfi that better suit a white variety such as Fiano than Aglianico. One is struck by the honeysuckle aromas of this deliciously pure wine; the palate crunchy with refreshing pebbly sapidity, ripeness and great agility.

Mux Branco, DO Douro, Muxagat Vinhos -- Muxagat Vinhos -- Portugal

Muxagat means owl and cat in Portuguese; it is also , probably more relevantly, the name of a small village in the Douro Superior, located 2 km from the small town of Vila Nova de Foz Coa. It was here where Mateus Nicolau de Almeida, from the famous eponymous Port House, set up an organic winery, intent on exploiting the potential of the steep schistous slopes and determined to bring to greater prominence indigenous grapes, especially Touriga Nacional and Touriga Francesa for the reds and even more obscure varieties for the whites.

This delicious white wine is a blend of 90% Rabigato and 10% Mistura, only the former of which will be (vaguely) familiar to the UK market. The wine is fermented in stainless steel and then matured  60% in Austrian and French barrels (600 litres)and 40% in tank.

It has taken on notes of crystalised fruit, spice and minerals, with an impressive seam of acidity, which is characteristic of the Ribagato grape.  Farmed in accordance with organic principles with all the husbandry (as it is hard to avoid on such terrain) done by hand, this wine is a real labour of love and nicely reflects the aphorism, given Mateus’ extensive vinous travels, that one can only know one’s home for the first time after a period of travel and exploration.

The Islander Chardonnay Islander Estate Vineyard -- Islander Estate Vineyard -- Australia
Chardonnay, 14% alc.
The fruit for this Chardonnay wine comes from two sources, Kangaroo Island itself and the Adelaide Hills on the mainland, both of which are amongst the coolest viticultural zones in Australia. The wine is lightly oaked and displays hints of exotic fruit such as melons and pineapple on the bouquet, but retains a fresh acidity and a delicious minerality which makes it semi-European in style. Try with grilled or fried fish.

A classic example of a Frenchman spotting a cool-climate site in which to make elegant, restrained wines in a European style.

Chablis, La Forêt, 1er Cru, Jean-Claude Bessin -- Jean-Claude Bessin -- France
Chardonnay, 13% alc.
One of our favourite Chablis suppliers, still flying below the radar but providing quality well above the norm. Crisp, bright acidity and a medium body with a little earthy mushroom fruit and some crunchy green apple. Pure, elegant fruit and plenty of poise on the long finish.

Jean-Claude Bessin has been bottling his own wines in the hamlet of La Chapelle Vaupelteigne, just north of Chablis itself, since 1992. Though trained as an architect Jean-Claude Bessin preferred to take over the vineyards of his Tremblay father-in-law who belonged to the co-operative.

As well as Chablis vieilles vignes, Jean-Claude has vines in the premiers crus of Fourchaumes, Montmains, and La Forêt - which may also go under the Montmains name, but he bottles his separately because he finds them stylistically different. There is clay of all colours in the soil, which heats up slowly but retains the heat very well. There is a rich character to the fruit of Forêt wines and notable complexity, due to the variations in the clay and the multiplicity of stones which render drainage very effective.

Evolution in Jean-Claude’s cellar in recent years has been towards more natural winemaking. The majority of the crop is now harvested by hand, with natural yeasts preferred for fermentation. The wines have a long élévage on fine lees, the crus being bottled after 15 to 18 months, with a proportion of barrel fermentation and maturation for the top wines.
