Viognier Montagne Noire, Pays D'Oc
The Black Hills of Minervois harbour some of the most interesting terroirs of the Languedoc, a fact that has not escaped Jean-Michel Cazes, famed proprietor of Château Lynch-Bages in Bordeaux. The slopes are dominated by limestone soils and at this reasonable altitude (nearly 400 metres in this case) white grapes flourish. Maximum love has been invested across a range of wines, including this luscious honeysuckle and apricot scented, succulent dry wine. Viognier can be rather temperamental; if one harvests too early it lacks weight, too late it can be cloying. The grapes for this example were clearly picked on the perfect day!
