Fourrier’s 2008 Gevrey-Chambertin Combe Aux Moines mingles game and raw meat character with ripe red and black fruits, coming to the palate palpably dense and rich in fine-grained tannins. Salinity in the finish here is brasher and more briny, but less savory than in the corresponding Champeaux, whereas this Combe aux Moines has the advantage in terms of sheer sweetness of fruit and sense of energy. This should be worth following for up to a decade.
