Flinchman’s Caballero de Cepa is a delightful Chardonnay from the Barrancas region of Mendoza made by Luis Cabral de Almeida. Six months in French barrels with weekly bâtonnage has fostered a very fine example, with no shortage of ripeness, pleasing toasty oak and firm balanced and, most importantly, natural acidity. New World Chardonnay as it should be.
