Gros Manseng tops the bill in Henri Ramonteau’s Chant des Vignes. Fermented in stainless steel, this is a very pure expression of Manseng, with notes of grapefruit, pineapple and quince evidenced and hints of dried flowers and raisins too. Natural acidity underlines the freshness but the weight and texture is such to make this a perfect match for scallops or terrine.
