Laurent and Geneviève Vidal farm the fashionable quartz-strewn Terrases de Larzac bio-dynamically. They champion the ancient Carignan grape with real aplomb, and the Carignan, given time and due care, will repay the compliment. 

The wine has had minimal handling, certainly without fining or filtration, and when first opened, the aromatics are quite raw. After decanting, however, it takes on a wonderful almost ethereal quality, with a nose of laurel, cassis and sousbois, then a rich and concentrated palate, again marked by the contrast between the generous weight of black fruit, and the lifted mineral character, with hints of spice and licorice rounding it off perfectly. One for game, casseroles, or even Roquefort cheese, which is made locally.
