Every year we blend our house Chablis with producer Thierry Mothe so as to offer a style which hits the Chablis hallmark of minerality spot on. 2010 is a beautifully aromatic vintage in Chablis, and this delicious wine boasts notes of lime-blossom and spring flowers which lead to a balanced palate full of zesty fruit but which is still classically crisp. This is a wonderful companion to shellfish, smoked salmon or lighter meats.
