Toolangi Vineyards, Estate Chardonnay, Victoria, Australia

The aim with the Estate Chardonnay is to produce a wine which really reflects the terroir on which it is grown. The grapes are fermented in barrel, with a combination of natural and cultured yeast, with some of the lees added to provide extra richness.

No malolactic fermentation took place in order to preserve a higher level of acidity to help the wine age and to maintain a fresh vibrant acidity. Ageing takes place for 11 months in wood, a combination of barriques and 500-litre puncheons, 40% new.

The bouquet exhibits citrus, nectarine and spicy grapefruit aromas; on the palate there is real concentration, great finesse and a wonderful harmony between all the various elements. A great partner to roast pork or chicken, or salmon in a cream sauce. Victoria’s Yarra Valley’s reputation as a source of wonderfully refined wines grows apace, and the Toolangi range of wines really impressed me for their complexity and subtlety.
