The age for the vines here is over 75 years, and the wine has been fermented in barrique and then matured on its lees for 48 months. Unsurprisingly it is still, therefore, as the French might say; ‘touché par le bois’ but these carpentry aromas will cede to something altogether more interesting over time. Sophie and Pierre follow a natural path throughout the process, including the low yields, the natural yeasts and the low dosage (2 g/l here).

This is champagne at its most cerebral and perhaps also its most challenging; the nose combines dry apricots, slate and smoke. But this wine is far more than smoke and mirrors; a vinous, gustatory experience, but with plenty of ripeness and generosity at its core.
