Recioto di Soave

See Recioto di Soave producers

Recioto di Soave is a  historically famous, if rather niche, sweet white ‘passito’ from the Veneto that has its origins in the 5th century AD and an ancient wine known as ‘acinatico’.

It is made from Garganega grapes that are dried and raisined using the same ‘appassimento’ process as for Recioto and Amarone della Valpolicella

Noble rot (aka botrytis cinerea) is actively encouraged, bringing some welcome complexity to what would otherwise be a fairly simple, innocuous wine.
