A very satisfactory millennium vintage in Chablis with many growers producing their best wines since the stunning 1995 and 1996 vintages. Weather conditions were very beneficial to growers with a temperate spring and early summer, which saw no frost nor hail (perennial hazards in Chablis).
July was however unseasonably wet yet the hot and dry August ensured that the Chardonnay grapes ripened fully. Harvesting commenced around the third week in September.
The wines are ripe and also display very good acidity levels. Comparisons between this vintage and the 1995 wines are being made, as the 2000 wines appear to have greater concentration than the three previous vintages.
Overall vintage 2000 has given a great deal of pleasure for drinking and has actually lasted better than expected. Chablis wine which have avoided any premature oxidation issues should still be fresh and interesting to drink up to 2012.
