OVERALL WINNER: Red Bordeaux is the perfect accompaniment to Lamb.
Roast Lamb, Kleftiko, Lamb Casserole, Irish Stew
The perfect wine with Roast Lamb is Red Bordeaux, wines from Pauillac and Médoc are particularly good matches. However New World Bordeaux equivalents like Chilean Reds would also work.

Alternatively if you want to get away from Cabernet/Merlot blends then Rioja should be your choice. It is also perfect with Kleftiko. For a Lamb Casserole and Irish Stew you could return to Red Bordeaux but this time select a Petits Chateaux or Cru Bourgeois , or go for a Chilean Red.
Lamb Kebab, Lamb Chops, Lancashire Hotpot, Shepherd's Pie
Lighter dishes like Lamb Kebab or Grilled Lamb Chops would work well with a fruitier New World wine, such as a New Zealand Red or a full-bodied Pinot Noir. Lancashire Hotpot is actually quite light-weight for a meat-dish and so you could try a lightly oaked, dry White like an Italian Chardonnay or similar from Southern France.

Shepherd's Pie needs a low tannin Red wine with little or no oak influence. Beaujolais or fruity Vin de Pays Reds are the best bets.
Lambs Liver, Lamb Kidneys, Lamb Sweetbreads
If offal is what you fancy then try a Barolo, or better still with the Lambs Liver is an Australian Shiraz. Sweetbreads simply sauteed in butter require a light White like Italian Chardonnay, but if they are to be served in a cream sauce then go for more body in the wine: Chilean Chardonnay or a White Burgundy.
