Aidani is usually used for making dry, sweet wine and rose wines on the Cycladic Islands of Santorini, Paros, Amorghos and Naxos. An aromatic, floral nose is the trademark characteristic of this grape. On Santorini this variety is usually blended with Assyrtiko and Athiri to make wonderful dry wines and glorious oak-aged sweet Vinsantos.
