Pouring a wine in a decanter allows oxygenation, and "wakes up" the wine, so that it unfolds its full personality and flavour.
Decanting "opens up" a young or tannic wine to release its aromas, while in the case of older vintages, it enables the separation of the liquid from the sediment. Decanting also presents the wine in a glass in all its glory, highlighting its colour nuances.
Read Anne McHale MW’s article discussing whether or not one should decant a particular wine.
