Vincent now has 11 hectares of Sauvignon Blanc vines and 3.5 hectares of Pinot Noir vines. He uses very low yields and hand harvests his grapes. In the winery, following a debourbage at low temperatures, fermentation is done parcelle by parcelle in thermo-regulated enamelled steel vats, with each cru maturing with its lies fins in suspension until March when the wines are finally assembled.
Harmonie is a cuvée produced from old vines (with yields of less than 30 hl/ha) and is a superbly well-balanced wine. After fermentation in new oak barriques the wine is left on its lees in cask for 6 months before being transferred to mature in vat until being bottled (unfiltered) at the end of the year. The result is a rich and superbly elegant wine.
