El Camino del Pensador

El Camino Del Pensador's Mezcals and agave spirits are sourced from grower-producer families in the Miahuatlán region of Southern Oaxaca, Mexico. El Camino del Pensador's aim is to champion the Mezcal culture of this region: the terroir, the traditional production techniques, and the hyperlocal pre-commercial mentality. A commitment to sustainability and the local economy ensures the continuity of this culture, with 10% of proceeds donated to community projects in the region. In 2023, Pensador became the world’s first B-Corp certified Mezcal.

All Pensador expressions are organic and free of additives. Local agave varietals include Espadín, Madrecuishe, Bicuishe, Tobala, Tepextate, Jabali, Mexicano, Tobaxiche, Arroqueno, Verde, and Cucharillo (Dasylerion). Fermentation is natural (without proprietary yeasts), and water is drawn from local wells.

The spirits share a bright and agave-forward profile. Aromatic, mineral and grassy notes are balanced by floral sweetness, giving way to a long, complex finish. Smoke is present but not overpowering, arriving late on the palate and lending depth to the profile. At 48% ABV, these spirits are pleasingly warming without being burning – like a fine cask-strength whisky. These are spirits to sip slowly at room temperature.
