Old Hobart Distillery
Founded by Casey Overeem, Old Hobart Distillery is a small family business, located in the south of Tasmania and is home to Overeem Whiskey. Casey acquired a distiller’s license for Old Hobart in 2005, and production started in 2007.
Casey started experimenting with distillation of whiskey in the 1980s, and during that time built up his knowledge and skill, before going on to open the distillery. After he had secured a license, he visited a number of Scottish distilleries to gain more experience in the process of distilling.
The majority of the whiskey is aged in Sherry and Port casks for added flavour. One whiskey, Port Cask Matured Overeem Single Malt, has been given a Liquid Gold award by author of The Whiskey Bible, Jim Murray.

Description
Bold sherry notes (Oloroso dryness, mixed with a touch of Pedro Ximenez sweetness) sit alongside a zesty blood orange, some menthol tones, anise and high quality cocoa enriched chocolate. With a dash of water, the complex flavours develop and none of the resonance is lost: a touch of woody smoke can be found if you look hard enough, alongside some toasted nuts, delicate fresh herbs, cinnamon-laced syrup and vanilla. A lingering palate, which evolves and truly demonstrates its uniqueness with every sip. The finish is lengthy, with drying notes of moist raisins and orange zest.
