Vermouth is a fortified wine macerated in aromatic herbs and spices, using closely-guarded recipes unique to each producer.
Antonio Benedetto Carpano from Turin is alledgedly the "godfather" of the vermouth. In 1786, he chose to name his flavoured wine as vermouth, inspired by a German wine infused with wormwood -vermut in German (wormwood is the herb behind the production of absinthe). Flavouring wines with herbs was not uncommon at the time, in an attempt to mask the coarse, acidic flavour of cheap wine.
Three styles of Vermouth exist, reflecting the degree of sweetness in the final product: extra dry, bianco/white, and sweet/red.

Sweet red vermouth Red Vermouths (aka Italian vermouth) is drunk as an apéritif on its own, as well as in cocktail drinks like the Manhattan.

Dry white vermouth (aka French vermouth) complements gin or vodka as a core ingredient in the mixing of Martinis.
Once opened, dry Vermouth has a self life of about 6 months, other styles about 12 months and should be kept refrigerated.
