Cab.Sauvignon


The most famous red wine grape in the world and one of the most widely planted.

It is adaptable to a wide range of soils, although it performs particularly well on well-drained, low-fertile soils. It has small, dusty, black-blue berries with thick skins that produce deeply coloured, full-bodied wines with notable tannins. Its spiritual home is the Médoc and Graves regions of Bordeaux where it thrives on the well-drained gravel-rich soils producing tannic wines with piercing blackcurrant fruits that develop complex cedarwood and cigar box nuances when fully mature.

The grape is widely planted in California where Cabernet Sauvignon based wines are distinguished by their rich mixture of cassis, mint, eucalyptus and vanilla oak. It is planted across Australia and with particular success in Coonawarra where it is suited to the famed Terra Rossa soil. In Italy barrique aged Cabernet Sauvignon is a key component in Super Tuscans such as Tignanello and Sassicaia, either on its own or as part of a blend with Sangiovese.

"William Fèvre was one of the first in a now long list of European vignerons attracted to the benevolent climate and pure soils of Chile. Don Victor comes from panoramic vineyards in the high Maipo Valley, the grapes have been hand-harvested and matured for four months in both French and American barrels. The Cabernet Franc lends attractive aromas and a pleasing freshness to a palate which is rich and finely structured, with notes of plum and blackberry to the fore and a spicy finish. With soft nicely crafted tannins and balancing acidity, this would work well with roast pork or guinea fowl."

With generous decanting, warmth & a (sub)prime T-bone steak the wine's fullsome red & black berried, chewy fruit can be coaxed out to reveal a sweet soul & a delicious St.Estephe-like stoniness. How refreshing to come across a Napa Cabernet which shows real minerally terroir & a singular personality & not the gloopy sweet fruit, big alcohol & overbearing vanillin oak more commonly associated with California. Some say this is the ace in the Frog's Leap pack, one the very finest examples of top Merlot around today. The Rutherford terroir certainly seems to give the edge: the nose discreetly decorated with fine mocha shavings along with an earthy, fleshy black cherry character, echoing Pomerol's best. To taste one's struck by the pencil box elegance of it all, albeit still a tad unresolved in youth. Ideally drunk between 2010 and 2020, along with some lambs liver.

Despite a trickier vintage, John Williams shows just why Frog's Leap is so highly regarded: focused, slightly shy crunchy cassis fruit aromatics, while the medium/full bodied palate is finely balanced, complete, with excellent weight and emphasis...the product of organic and biodynamic principles. Drinking now till 2016, especially with beef steak and chips.

If a wine could have perfect pitch this would be it: the tightly-coiled nose of this 96% Cabernet Sauvignon and 4% Cabernet Franc wine is poised with juicy graphite and cassis notes while the palate's delicious with pretty, small-berried red fruit, some spice & cocoa, the silkiest of tannin structures &, overall, a certain aristocratic aloofness commensurate with top Rutherford wines. Immaculate but ideally savoured between 2010 & 2020, along with some fine rib-eye.

Such were the tricky conditions in '02 that the normal 20% Sangiovese element was omitted to leave a predominantly Cabernet wine. Much for the better, some might say, for the nose seems racier, better defined with bright cassis notes; the palate follows being generously ripe yet marked by some fine Cabernet tannins & fresh acidity. A pleasant surprise, for drinking now & over the next few years. Good with roast lamb. MORE

The 1997 Cabernet Sauvignon Monte Bello exhibits an opaque purple color, as well as an elegant, black currant, mineral, and smoky oak-scented nose. The wine is medium to full-bodied, tannic, and in need of 10 years of cellaring. Not a blockbuster, this offering is more elegant and finesse-styled than usual. However, as with previous Monte Bellos, it will take a long time to come around, yet it will keep for 2-3 decades.
