The rare Paplote agave used for this mezcal takes 15 years to mature before it is harvested. Fermentation takes place in barrels made with local Guamachil wood using ambient yeast for a long and slow fermentation. The peculiar, enticing nose has notes of haylage, smoked meats, Tabasco, sundried tomatoes and rosemary. The palate has the beautiful creamy texture found in all Clase Azul’s spirits, holding notes of spiced wood, crushed rocks, pepper and butter. This isn't a mezcal for the fainthearted but if you're feeling adventurous, then pour a glass of this incredible mezcal.
