Peter Gago describes Bin 704 as a “a hemispherical mirror image of Bin 407”, representing the Penfolds take on Napa Valley.

Dried herbs, sage and tomato leaf are the first notes to swirl out of the glass, followed by a charming array of red fruits: raspberry, redcurrant and cranberry. The black fruit profile of Cabernet Sauvignon is transformed in Bin 704 – I wasn’t expecting this! Not only is this wine delicious, it’s also surprising. The influence of French oak (only 40% is new) is just palpable, evoking sweet spice flavours but more importantly, structuring the wine for the future. The tannins are fine-grained and all components are balanced. The 2018 Bin 704 is Napa Valley through the lens of Penfolds winemakers. Purity is the word that springs to mind. Drink 2023-2034.

The 2018 Bin 704 Cabernet Sauvignon is rich and effusive, with all the personality of the vintage on display. Sweet spice, mocha, dark raspberry jam, liquorice and leather all take shape in the glass. Medium in body, with bright acids, the 2018 will drink well with minimal cellaring. It is another super attractive wine in this new line-up from Penfolds, but it is also a bit tight and in need of a few years in bottle.

"A hemispherical mirror image ofBin 407," Penfolds's chief winemaker, Peter Gago, said with a smile. It was only then that I got that 704 is 407 backwards. "We are able to access vineyards in Napa that others can’t access," he went on to say, referencing Treasury Wine Estates' considerable landholdings in this region. Beringer, Sterling Vineyards, Stags’ Leap Winery, Beaulieu Vineyards, etc. "We have sensitively used small amounts from our top vineyards—requested rows in the Burgundian model." Made from 100% Cabernet Sauvignon, the 2018 Cabernet Sauvignon Bin 704 was aged mainly in French oak, 40% new, for 16 months. Deep garnet-purple colored, it leaps from the glass with vibrant Morello cherries, crushed black and red currants and boysenberries scents, followed by touches of cedar chest, menthol, dried roses and black olives. Medium to full-bodied, the palate has an approachable, grainy texture and a lively line lifting the black berry flavors on the bright, pure finish. Among the recently released quartet of USA/Californian wines under the Penfolds banner, this has the clearest sense of identity (other than Penfolds). It is a well-made Napa Cab with its own take on the typical style.

Bright and vibrant in the glass with deep, dark aromas of black plum grasped in a tight-fisted blackberry glove. While the body is fashionably lean, the initially tight flavours relax to a plush embrace. More is revealed as the wine opens up in the mouth: sumptuous fruit that remains firm and politely behaved, a chew of tobacco and deliberate oak tannins that bite in the tail.

The winemaking team is led by the masterful Peter Gago; it has the herculean task of blending the best wines from a multitude of different plots, vineyards and regions to create a consistent and outstanding range of wines. Its flagship wine, Grange, is firmly established as one of the finest red wines in the world.

South Australia

At 72,000 hectares, South Australia is the engine room of the country's wine industry, responsible for 43 percent of its vineyards and encompassing some of Australia’s most famous fine wine regions.

One of the most important areas in qualitative terms is the Barossa Valley, beginning 50km north-east of Adelaide, and famous for its full-bodied Shiraz, as well as for its Grenache and Mourvèdre. To the east, the cool Eden Valley is home to some really fine Riesling and top-class Shiraz, such as that made by Henschke. To the north of Barossa is the Clare Valley, also a source of good Riesling but home to well-structured reds as well.

South-east of Adelaide lies the delightful vineyard area of the Adelaide Hills, where fine Sauvignon, Chardonnay, Riesling and Pinot Noir are produced by wineries such as Petaluma and Llangibby EstateLanghorne Creek to the east of Adelaide has earned a reputation for its Cabernet Sauvignon, Verdelho and Shiraz while, between Adelaide and the sea, McLaren Vale is a noted area for red wines.

The unique vineyard region of Coonawarra lies 400km south-east in an area of pure limestone topped by a loose, red topsoil. Cool enough to resemble Bordeaux, this area produces great Cabernets and Merlots and is much in demand. Slightly to the north and to the west lie the regions of Padthaway and Mount Benson respectively, which enjoy similar success as sources of great white wines, especially ChardonnayWrattonbully however is known for its fresh, varietally-pure Cabernet Sauvignon and Merlot.

However it’s the less-distinguished Riverland region that accounts for 50 percent of the state’s wine production.

Cabernet Sauvignon

The most famous red wine grape in the world and one of the most widely planted.

It is adaptable to a wide range of soils, although it performs particularly well on well-drained, low-fertile soils. It has small, dusty, black-blue berries with thick skins that produce deeply coloured, full-bodied wines with notable tannins. Its spiritual home is the Médoc and Graves regions of Bordeaux where it thrives on the well-drained gravel-rich soils producing tannic wines with piercing blackcurrant fruits that develop complex cedarwood and cigar box nuances when fully mature.

The grape is widely planted in California where Cabernet Sauvignon based wines are distinguished by their rich mixture of cassis, mint, eucalyptus and vanilla oak. It is planted across Australia and with particular success in Coonawarra where it is suited to the famed Terra Rossa soil. In Italy barrique aged Cabernet Sauvignon is a key component in Super Tuscans such as Tignanello and Sassicaia, either on its own or as part of a blend with Sangiovese.
