Description
Once again, we are thrilled to collaborate with Zak Frost of The Wiltshire Truffle Company for a one-off seasonal dinner. Zak and many leading chefs around the world have long extolled the quality of Australian black truffles and we are placing them centre-stage alongside a selection of fine European and Australian wines.
Australian truffles are the same variety as European black winter truffles – Tuber melanosporum or Périgord truffles. They are available throughout the Australian winter, with the season running from early June until late August.
Australian truffles are a relatively new ingredient and the industry is now booming with over 20 tonnes of superb truffles being hunted every year, most of which are exported. Despite being the same variety as European winter truffles, Australian truffles have a subtly different flavour. As with wine, this is likely to be due to the terroir, with many experts and truffle lovers considering them to be superior to European black truffles.
For this special occasion, the accompanying wines will be selected by Michael Dabbs, one of our fine wine experts, with some exceptional examples of cellar-aged whites and reds chosen from Berry Bros. & Rudd library stocks.
