One Day Wine School
Our one-day wine schools are a great way to get a thorough overview of a region in a day.
Starting in the morning with tea and coffee on arrival, we spend around 2 hours exploring the region, with 8-12 wines showcasing all different styles. With the basics covered, we head to our vaulted Napoleon cellar for an aperitif and to put the morning’s education to the test with 5 more wines paired over a delicious lunch, crafted by Head Chef Stewart Turner.
The day finishes around 3.30pm.
When is a wine ready to drink?
We provide drinking windows for all our wines. Alongside the drinking windows there is a bottle icon and a maturity stage. Bear in mind that the best time to drink a wine does also depend on your taste.
Not ready
These wines are very young. Whilst they're likely to have lots of intense flavours, their acidity or tannins may make them feel austere. Although it isn't "wrong" to drink these wines now, you are likely to miss out on a lot of complexity by not waiting for them to mature.
Ready - youthful
These wines are likely to have plenty of fruit flavours still and, for red wines, the tannins may well be quite noticeable. For those who prefer younger, fruitier wines, or if serving alongside a robust meal, these will be very enjoyable. If you choose to hold onto these wines, the fruit flavours will evolve into more savoury complexity.
Ready - at best
These wines are likely to have a beautiful balance of fruit, spice and savoury flavours. The acidity and tannins will have softened somewhat, and the wines will show plenty of complexity. For many, this is seen as the ideal time to drink and enjoy these wines. If you choose to hold onto these wines, they will become more savoury but not necessarily more complex.
Ready - mature
These wines are likely to have plenty of complexity, but the fruit flavours will have been almost completely replaced by savoury and spice notes. These wines may have a beautiful texture at this stage of maturity. There is lots to enjoy when drinking wines at this stage. Most of these wines will hold in this window for a few years, though at the very end of this drinking window, wines start to lose complexity and decline.

Description
Our One-Day Introductory Wine School is a relaxed yet educational experience, designed to introduce you to the basics of wine tasting and the most commonly found wines of the world.
During the two-hour morning masterclass, your tutor will guide you through five different pairs of wines that will be served blind, helping you to compare and contrast them without preconceptions. You will be encouraged to think about your observations, linking your thoughts on the wine’s aromas and flavours to the climate and country where the grapes were grown.
We will cover all the elements in the glass and how to detect them – from acidity and ripeness through to tannin, alcohol, oak and age. At the same time, we will look at the key grape varieties and the regions in which you’ll most commonly encounter them. You will learn to trust your intuitions – and you may discover that you know far more than you gave yourself credit for.
The morning tutorial is followed by a wonderful four-course food and wine-matching luncheon, during which you will have the chance to practice your newfound tasting skills.
Wines to be tasted: the exact line-up of wines for this tasting is still to be determined and will be published closer to the time of the event.
