Pete Bignell not only grows his own rye on the farm but even built his own stills, which are direct fired from used chip fryer oil. This farm distillery is an almost entirely closed loop, with bio-oil being the only input and whisky the only output.

The nose proves immediately that this glass contains a huge, characterful dram. Farmyard aromas introduce rye dough, spiced vanilla, popcorn and warm gingerbread. These flavours are only magnified on the palate with burnt sugar and salted caramel cascading into rye beer, shortbread and clove. Spice lingers on the finish. This is a colossal, intense and unique offering from the distilling folk hero of Tasmania.

About this SPIRIT

Belgrove Distillery

Belgrove Distillery

Pete Bignell of Belgrove Distillery is a true pioneer in the world of distillation, and his approach to crafting spirits is as unconventional as it is environmentally conscious. Operating from his farm, Bignell has mastered the art of whisky production and has undertaken a remarkable journey of self-sufficiency and sustainability.

One of the most distinguishing features of Belgrove Distillery is its commitment to using locally sourced and homegrown ingredients. They take the “farm-to-table” concept to a new level by cultivating their own rye on the farm. This hands-on approach allows them complete control over the quality of the grains, ensuring that only the finest rye makes its way into their whisky production.

But it doesn’t stop there. The distillery’s ingenuity truly shines through in their innovative distillation process. They have gone to great lengths to construct their own stills, a testament to their dedication to craft and sustainability. What makes these stills even more fascinating is that they are directly fired using used chip fryer oil. This ingenious cooking oil recycling reduces waste and adds a unique touch to the distillation process, imparting subtle flavours that can’t be achieved through conventional means.

At the heart of the distillery’s output is the whisky that emerges from this remarkable journey. Each drop is a testament to their commitment to quality, sustainability, and innovation. It embodies the spirit of the land, the rye fields, the recycled chip fryer oil, and the passion of its creator.
