Recioto di Soave is a historically famous, if rather niche, sweet white passito from the Veneto that has its origins in the 5th century AD and an ancient wine known as acinatico.
It is made from Garganega grapes that are dried and raisined using the same appassimento process as for Recioto and Amarone della Valpolicella.
Noble rot (aka botrytis cinerea) is actively encouraged, bringing some welcome complexity to what would otherwise be a fairly simple, innocuous wine.
